Hi charles! I dont see your personal email address, i think the list has obscured it. In any case my 2 cents:
- Some people on this list including me have their own Odoo integration company, implementing Odoo for their customers. The choice between Enterprise and Community is made on a case by case basis, sometimes based on rational arguments, sometimes just the wish of the customer. Some people will also just recommend Community for purist reasons: Enterprise is not open source.
- You can view Enterprise as a set of modules on top of community. So even when making a choice for one of the two, its possible to switch back and forth later.
- OCA is a volunteer effort, so if you want help from OCA members then you are also expected to contribute something back. If you are unable to do that its best to just choose an Odoo partner company (of course the best choice is a partner that is also active in OCA:) and pay them to be your first go-to contact in all things Odoo and OCA.
- Part of what the OCA does is to provide a platform to synchronize efforts to make modules that make the Community edition feature-complete. An example is, in v16.0 Odoo has moved the bank statement reconciliation wizard to the Enterprise edition. Then, in OCA there comes a discussion and in the end a module that reimplements it. But sometimes you will also find efforts in OCA that enhance Odoo and will enhance Enterprise as well: bi_sql_editor or mis_reports module for example. So, in Enterprise, OCA is useful, but if you choose Community, you *need* OCA tools, if only for being able to upgrade (OCA OpenUpgrade project).
- If you want to be self reliant Community is a logical choice, but, its still possible to choose Enterprise but self-host it or have it hosted by a partner but have full access and control over it. You just need a partner because only partners have access to the Enterprise source code and can provide you with a license. We (as a partner) have a couple of such customers so its not uncommon.
- I sometimes end up advising customers against the use of Odoo, if their business is small and they dont have so much time or money. Odoo is powerful but especially upgrades can be time consuming so sometimes the investment is not worth the benefit and someone is better off just using a simple SaaS offering that is tailored to the purpose. On the other hand such customers could still benefit from the "Odoo online" offering, where you get support and upgrades included in the monthly price.
These are just opinions, but maybe they can help you along.

Thank you for the responses. I will speak with the sales folks, but I'm generally a larger supporter of "rolling my own" and not being subjected to unnecessary red tape and license fees, especially for our use, my $dayjob might pay, just because they can. Also, the issue that I was running into is that I couldn't purchase the enterprise license as a self hosted on a month to month basis, I must purchase the yearly plan, which defeats the purpose of "trying it out" more than just the two hour demo. Just not convinced that it's worth the money yet. Another way to ask the original question, does anybody on this list run the enterprise edition and if so, are you self-hosted, or making use of Odoo's hosting ? Feel free to respond directly if you don't want to share with the list. At the end of the day, I'll have to just install it and figure out the specifics.
