Thank you, Pedro, for taking the time to look over my PoC.
I attended Jordi's impressive presentation of his work with DMMRP, however, I'm not sure it is entirely applicable to such a dynamic environment as my customers, especially taking into account warehouse capacity limitations which restrict order volumes.
For many key products, there are so many constraints and decisions that require intimate knowledge of the industry that I think the visual dynamic approach I have proposed may be the only viable one. Not 100% sure.

Seeing your PoC, it can be done with 2D matrix, but it's going to be tricky for converting from/back the matrix values to the actual values reflected on tables. Maybe an editable list can be more suitable if you control order, and as said by Nhomar, several computed fields can make the trick
Any way, I invite you before starting this huge development, to evaluate other stock procurement methodologies like DDMRP, that is going promoted by several great OCA contributors, which has already dumped the supporting modules to OCA/ddmrp and depending repositories. Note that the modules is only a part of this, as you need to understand how DDMRP it works and design the buffers from the specific company data, but I can assure you that with this, you won't need this table, and you have already other control panels in the developments.
